Bendida Samodiva Wild Rubin 2020

Made with wild yeast and left unfiltered, this Rubin – Bulgaria's own Nebbiolo x Syrah cross – comes from Bendida, made by the cult winemaker Elizabet in the Thracian Lowlands. This is the wine she loves making - wild fermentation, biodynamic, no oak, and minimal intervention. With only 300+ bottles made a year. Expect brooding dark fruit, violet aromatics, flavours of the earth, and a peppery, firmly tannic structure. Built for grilled red meats, Balkan-style stews or a well-aged sheep's cheese.
